At Bodegas Romale they make sure to select the best grapes, as they are aware of the importance of the raw material in the final result. They select healthy grapes in perfect conditions of maturity, acidity, intensity, color and tenacity. The aging of the wines is carried out in subway cellars where the wine rests in perfect conditions of humidity and temperature.
The wine matures in contact with wood extracted from American and European forests. After aging, the wine is bottled and continues to rest in these cellars, developing the characteristic and specific bouquet of our land and grapes before being released to the market.

In 1998 the facilities were expanded, acquiring the most modern technologies for winemaking. One of the last bets of our winery has been the elaboration of a sparkling wine by the traditional method, starting from the second fermentation of a base wine coupage of the varieties Macabeo and Parellada, as well as a single variety Xarel.lo and Garnacha for the rosés. All of them under the D.O. Cava.
